How to Add Greens to Your Breakfast

You have heard that you should never skip breakfast, but did you know that it does more than keep your energy up and your long-term weight off? A recent study has also shown that men who skipped breakfast saw an increase in heart attacks and women who skipped breakfast saw an increase in diabetes.

So now that I hopefully got you eager to eat breakfast, you don’t want to eat just any old breakfast, do you? Supercharge your breakfast with some dark leafy greens. Dark leafy greens are super foods packed with vitamins A, C, E, and K, and many have some of the B vitamins too. They also contain fiber, iron, magnesium, potassium and calcium. Yes, calcium!  So let’s add some spinach or kale to breakfast and make sure you get your veggie count in.

Egg dishes: Saute the greens with some olive oil & garlic and then throw them in the egg dish of choice… quiche, omelet (add some feta too), frittata, or a scramble

Smoothie: Add a few leaves to your regular smoothie or go for green with a combinations of…peanut butter, almond milk, banana, kale & spinach, apple, and a little ginger

Bake up some Zucchini Bread or go Indian with a vegetable uttappam (they sell the batter mix in Indian stores)
